Cold chain transport monitoring operation process

It is known to all that the need for cold chain transport monitoring of goods from output to consumption requires more links. The efficiency of cold chain monitoring depends on the effective linking of various aspects of cold chain logistics. Due to the differences in production, circulation, and other processes of different products, cold chain logistics involves different aspects. Take fruits and vegetables as an example. Generally, cold chain logistics processes such as post-harvest pre-cooling, refrigerated transport and distribution, cold storage, and cold storage sales are generally adopted; while meat and poultry products generally undergo cold chain logistics processes such as frozen processing, refrigerated transportation and distribution, and refrigerating and refrigerating sales. The general cold chain monitoring mainly includes the following steps.

(I) Frozen processing

This section includes the cooling and freezing of meat, poultry, fish and eggs. And in the cold state of the processing operations; also includes the selection of classification, packaging and other processing operations. It is not easy to control the temperature during the processing, and usually it involves various refrigerators, refrigerators and refrigerators used by the end consumer.

(II) Post-harvest pre-cooling

Post-harvest pre-cooling of fruits and vegetables refers to the use of certain equipment and techniques to quickly remove the field heat from the product, cool it to the temperature at which the fruits and vegetables are suitable for transportation or storage, slow down the respiration and transpiration, and maximize the quality indicators such as freshness and prolongation. Storage period, while reducing the energy consumption of human storage refrigeration machinery. Post-harvest pre-cooling is the first step in the cold chain logistics of fruits and vegetables. The quality of the cold chain determines the quality of the entire cold chain to a large extent. Therefore, after the fruits and vegetables are harvested, effective pre-cooling should be carried out according to the purpose of the fruit after harvest, the distance to the consumption place, the storage and sale time, and the physiological characteristics of the product.

(III) Refrigeration

The cold chain means that the cold chain merchandise is kept under the condition of cooling or freezing temperature, and the cold chain merchandise is stored for a certain period of time. According to the food cooling or freezing processing temperature, the cold storage can be further divided into the cooler storage and the frozen storage. Cooling and refrigerating means that the temperature at which the food is stored is lower than the ambient temperature but not below the freezing point of the food sap. That is, the moisture in the food does not freeze. This kind of refrigerating is called cooling and refrigerating of the food. Freeze-frozen means that the food is stored in an environment where the temperature is much lower than the freezing point of the food sap, and the general storage temperature is regulated at 18°C. That is, most of the moisture in the food is iced. This type of refrigeration is called freezing and freezing of foods. For example, meat products can be cooled and stored immediately after being frozen. Cooling Storage Temperature and Humidity Conditions (0°C-1°C, Relative Humidity 85%-90%), Frozen Storage Temperature and Humidity Conditions (21°C-18°C. Relative Humidity 95%-98%). Refrigeration links mainly include cold storage, refrigeration and other ancillary equipment, cooling, freezing and quick freezing equipment.

(IV) Refrigerated transportation and distribution

There are many forms of refrigerated transport. For example, highway refrigerated transport, railway refrigerated transport, waterway refrigerated transport, and aviation cold-cut transport, etc. The transport tools used mainly include refrigerated trucks, refrigerated containers, and other thermal insulation transport tools. In the refrigerated transport process, fluctuations in temperature at any point can easily cause a decline in product quality. Therefore, a complete and efficient cold chain requires specialized transportation tools as a guarantee. Taking fruits and vegetables as an example, the most recommended temperature for the International Refrigeration Institute is 1-2 days, the transport temperature is O°C-4°C, the storage and transport temperature for 2-3 days is roughly O°C-2°C, and the relative humidity is 95. %-100%.

(E) Refrigeration sales

After the product came out of the distribution center, it entered the wholesale and retail link, and generally sold at retail counters. This was done by manufacturers, wholesalers, and retailers. At the end of this chain of cold sales, cold storage, frozen showcases, and storage began to become an increasingly important part of the entire cold chain. Taking meat as an example, thawing operations are required in the refrigerated sales process, so that the ice crystals in the meat melt into water, and the meat returns to a fresh state before freezing, so that it can be processed easily. Thawing methods include natural thawing, mobile air thawing, hydrolytic freezing, microwave thawing, and steam thawing. Among them, air thawing is generally 14°C-15°C, wind speed is 2m/s, relative humidity is 95%-98%, and the temperature of hydrolysis and freezing water is about 10°C.
